[CONCEPT]
East and West are often dichotomies - in everything - pitted against each other as they lay claim to anything possible: ideologies, history, land, ethnicities, and food. While globalization has allowed for ingredients to venture far and wide, the fusion cuisines that have grown out of it have simultaneously embraced this exchange, while serving to reemphasize the roots of inspiration: Korean-Japanese fusion, French with Chinese, Japanese - whatever else - tinges.
But there are shared things: sugar and salt, and from there the list goes on. And, there are equally localized ingredients to match: from sheep testicles, to beet, to horse, to kale.
WEAST speculates on those boundaries and exchanges. As the name suggests, we acknowledge the benefits of those exchanges, but at times, we might find the differences just as fun. Sometimes we improvise with whatever we have in our mixed-up pantries, and other times we enjoy a puritanical pursuit of tradition. Regardless, we promise to always talk about food.
